Way back in my childhood there was a restaurant on the north side of the Tennessee River in Chattanooga called Fehn's. It closed in the 90's and opened back up over in Dayton. We used to eat there a lot - and although I've never been one for sweets, they made the best pies. Here is the recipe for one!
Now my mom would make her own pie crust - and then top it off with home-made whipped topping....I'm not that culinary advanced!
Lemon Rub Pie
Ingredients:
3/4 stick butter
1 1/2 cups sugar
1 Tbsp. flour
3 eggs
1/4 cup lemon juice
Zest of 2 lemons
Directions:
Beat eggs well and mix with flour
Mix all other ingredients with the egg/flour
Pour mixture into 9 inch pie shell
Slice a lemon paper thin and arrange slices over the surface of pie
Cook in preheated oven at 350 degrees until slightly browned and set.
Let cool prior to serving
