Smoked the last of the deer ribs. October can't get here fast enough. Marinated overnight in vickers then dry rubbed and smoked over apple wood for 3 hours. another 2 hours wrapped in foil with a splash of worcestershire and bbq sauce. tomatoes and cucumber pickles from our first ever vegetable garden. wife made jalapeno cheddar cornbread. i may never be rich, but i eat like a king.
to keep the ribs moist i lay a strip of thick bacon across each slap and spritz with a cider vinegar solution every hour.
when i wrap the ribs for the final 2 hours i stack them top side down. all the tallow melts and collects at the bottom of the foil boat and i lift the ribs up and out. very little waxiness this way.
