With a killing frost forecast for Sunday night and Monday night for most areas today and tomorrow are the last chance for any remaining tomatoes, peppers and cool season greens.
I will be gathering tomatoes to slice, bread and freeze for fried green tomatoes over winter, taking peppers to dry and seed from basil. Almost forgot I have couple dozen paste tomatoes for drying as well.
Chopped, boiled and froze 25 meals worth of turnip and mustard greens last night.
 
Drying the last of the Amish paste tomatoes along with old Italian basil and sweeter purple basil and a round of Serrano peppers.
Been seeing how many ways we can cook green tomatoes, chopped with onions, jalapeños, egg white, Louisianne breading mix skillet fried and served with a little salsa or topped with vegan mozzarella. Mmmmmm

Dropped them in a jar, added some dried basil and a pinch of salt then covered with olive oil. 1 month later and they did not absorb the oil, no rehydration at all. Just as crispy as when they came out of the dryer. Interesting they taste like fresh ripe tomatoes. My wife said I was on to something! Crispy, garden tomato taste a great addition to winter salads!
Guess I'm planting more paste tomatoes next year.
