With all this new interest in gar, do you have a recipe for gar balls? I have seen them cooked, eaten a ton of them but I don't really know what all they put in them.
 
Some of them have very big balls. Some have medium balls. In the winter a few have snoballs. And some have no balls atall. Those you eat whole.

This is the way Ive seen it done. Scrape the meat off the bones and combine it with green onions and cajun seasoning in a meat grinder. Boil as many pounds of potatoes that you have in fish. Combine the fish and potatoes then roll into balls dip into egg/milk and cover with corn flour not corn meal. Fry until they float. I also have heard of people boiling the fish first wrapped in cheesecloth, using a crab boil then mixing with potatoes.
 
the last time i ate them was lets see im 53 now and back then i was 9 so that was 44 years ago. i never knew the recipe but they was GOOD
