This show is absolutely terrible, but their content is priceless. The "America's Test Kitchen" folks do some excellent product lineups. Click on the video for their Chef's knife review. They actually sell a mix/match set of their favorite knives of each style. I'll look around to see if I can find it.

Typically, you'll be hard pressed for a "Kitchen Kit" knife set in a block that will give you a full set of good knives. Sometimes the paring knife sucks, but the steak knives are nice.

Generally speaking, an alloy carbon blade will hold an edge longer than a softer stainless alloy. Also, a forged knife will last longer as well.
 
I have one Wusthof chef's knife that is awesome. Not sure of the price as it was given to me. I have read good things about Japanese blades, but have not used one.
 
After years of screwing up knifes I have learned 3 things;
1. Dont let your wife use your knifes
2. Let a prof sharpen them
3. Repeat rule number 1

I have a mix of Henkel (two man, german made) and Wusthof at home, I don't have any complaints about either.

But if you have a forged carbon blade, it won't require sharpening as much. And when you do sharpen it, the edge won't lose as much material as a stainless blade.
 
I'll make you a good price on a lightly used Ken Onion DM-0500 Shun 8" chef knife. It needs to be sent to Shun for sharpening. I have moved to high carbon steel knives that take a few hours of good sharpening to bring up to standards.

Yes. Sorry, I am still trying to figure out this new site and I'm slow on it. I'll get photos and price up today (Monday)
 
$125 to your door and $5 to tndeer. Primary edge needs to be cleaned up but it is a very nice knife.

I have a full set of the Wusthof knives. They're good knifes and will do for all my kitchen use coupled with the Work Sharpe.

Question about knives.....
I've heard that you don't want to run your knives through a dishwasher because it dulls the blade. I don't but is there any truth to that?
