Oh man that is good. But I'll say this, it is spicey. Going to need a cold beer or glass of lemonaide. Not hot-hot, just spicey, the way it should. Make your nose sweat spicey.

By Fri it will really be seasoned. Don't try to make a meal of it, just get you a good taste or two. This is Cajun cooking at its' finest. Not Creole, coonasse cooking. That's where you put in whatever you want.
 
One thing I might say about gumbo, etoufee or jambalya, it is far better two to three days later. Just put it in the fridge, then warm it up. I'll bring this up in warming pans and just warm it well in the oven. You don't want it too hot, just good eating warm.

Let me also add, I am a saltaholic but I held back on the salt on this. I also held way back on the hot sauce cause I like mine pretty fiery. I believe you'll fidn this spicey enough :)
 
Well, you just made me decide what's for lunch tomorrow. Got a cajun restaurant just down the street from me (Bro's Cajun Cuisine, his last name is Breaux, hence Bro's). May just have to see what he's got cooking tomorrow.
 
A Cajun joint in Burns ? I thought all they had was Don Allens small engine repair.

But man! You should smell my kitchen. I outdid myself this time. I just wish I could eat it.
 
Naw, just live in Burns. I'm 'bout in the middle of downtown Nashvegas. Bro's is about 10-12 blocks west of downtown. There's also MoJo Grill, cajun with a 'mojo' twist.
 
Just lettin it cool and set up. That's about 15 pounds.

Hey BW, not sure of the date, but around March 12 or so on the food network, they will have a segment on the jambalaya at a place called Razz' (there's one in Smyrna and one in Nashville). The show is "Best meal I've ever eaten" with a different theme each week.
 
That jambalaya was GOOD. Best I can recall, there wasn't any left Friday night!

My sister is coming to visit this weeked and we are having a black beans and rice cooking contest. She has this crazy idea she can cook. Course she was raised down there, too.
 
lol, I know alot of crazies from La! Saw me some big gators on Grady's place, just got to wait till September. Went down to shoot some commercial footage for a sponsor and it only took 3 hours, spent the rest of the day wading the swamps and bayous on the place with Colin Boothe.
