What is the optimum thickness for whole muscle jerky?

For me, as thin as I can reasonably get it with my fillet knife. I don't worry too much about it being perfectly uniform.

I use a jerky slicing attachment on my grinder and it slices it about 1/8" thick. I enjoy the finished product.

It's all a matter of preference. I like mine thicker, but smoking and drying obviously takes a little longer. Try some different thicknesses and see what you like more.
