jerky ??? white mold

Been having some issues with my venison jerky.
Changed my recipe a bit.... equal parts Allegro marinade and Dr. Pepper. Soak 24 hrs, then put on the dehydrator until dry but still pliable.

Since I am not making it quite as dry, it is much more tender and tasty. BUT, it will mold after about 2 weeks in the ziplock bag.

Any suggestions on how to avoid this?
 
Allegro is a marinade made in Paris, TN. The only thing I marinate is inside tenderloin medallions for my wife as soon as I cut them out of the deer, and normally it's the hickory Allegro. I think she uses some as a part of a marinade for tenderized cutlets before frying.

Fishboy1, you've gotten my attention and I wanna try some of this (I love Dr. Pepper).

I would freeze it to keep it from molding. At room temperature it only takes a few days. Gets a funny smell when the mold grows so I don't like it that way.
 
TX, forgot to add, I shlosh in a bout 12 glugs of Smoked tobasco hot sauce in a gallon ziplock of jerky with the allegro and Dr.Pepper.

Im going to try using rootbeer next time just for something different.
 
White mold is nothing to worry about, but you must not have kids because mine won' last long enough to mold. Usually three days max and it' time to make more.
 
The cure gives me upset stomach headache the grouchies. And it doesn't stop the mold. The mold occurs because the meat is not completely dry OR it is exposed to moisture after being dried.
 
Sometimes if you bag it when it is warm the mold ruins it. I leave mine in the dehydrator until the next day. That let it cool and prevents moisture from forming in,the package.

I don't use the cure. Dehydrate and allow to cool to room temperature. Place it in a zip lock bag with the bag open for an hour or so. Seal up the bag and into the fridge it goes. Never had a problem with mold. Maybe it doesn't last long enough?
 
The jerky has moisture if it's not crispy and snap when you bend it. Most people like a little moisture to it, so just keep it in the fridge. Any soft pieces are too wet and should be dried more or eaten right away
