Gentlemen, Where is the best place to get your Jerky seasoning? I'm out and the Boys are craving. Thanks
 
Soy sauce, worsherestire, liquid smoke, salt and pepper. Some brown sugar if you want some sweetness. Cayenne pepper for some added heat. It doesn't last long enough around here for cure. And it will keep good through deer season in the fridge in ziplok bags. And I guess longer. Me and the family are finishing up some from last deer season.

I don't use cure on Jerky either. Soy Sauce, Worcestershire sauce, some cayenne, Brown Sugar, ground Chipotle, marinate for 24 hours then dehydrate. I used to dehydrate in the oven on its lowest setting with good results, but a dehydrator works bet.

I'm making some today.
 
Agreed. I've tried the cure stuff. Its okay, some is actually tasty. Jerky in my house disappears faster than my paycheck, no need for the cure's.

I'll admit I don't always use cure on whole muscle jerky, but I'm still concerned about the ease of bacteria development in ground meat. Just keep in mind that there IS a risk, especially if you don't use any heat in your drying process.

Whole muscle jerky dried at 160F doesn't need cure
