How was John Andersen at the Rhyman? Did "straight tequila night" take on a whole new meaning after Friday night/Saturday morning's debauchery?
 
That sounds like alot of fun, I enjoy having wild game with the boys. Got any good duck recipes besides the bacon wrap with jalopeno and blue cheese?

Are you talking wild duck or farm raised? Can't do the same thing with wild that you can do with farm raised. You'd never know they were the same bird if you tasted them together.

Whole Paycheck....er, Whole Foods sells them. And I think I've seen duck breasts at Fresh Market, too.

I agree, and unfortunately most hunters or worse the hunter's spouse do not know how to cook it, which leads many to believe that duck is terrible. The same can be said for goose.
 
Poser, your friends need to have some type of underground dining movement in Nashville. Guaranteed it would be a success. Checkout "the 4 coursemen", group of chefs in the Athens, GA area that sellout their dinners in seconds (40 seats). I'm on the email list for them, with kids, it's just to far to drive with only a few days notice, plus it'd be an overnight trip.

What restaurants do your friends work at here in Nashville. It's about time for the wife and I to have a date night.
 
I heard about that....wasn't it "illegal", and that's why it was underground?

I don't remember the reasons why they were in hiding, but it was something pretty silly. I can't remember if the one I read about was SF or Seattle.

If you ever get a chance to hit up a food truck her in nashville, these guys do it right. Their biscuits are some of the best I've had, especially today's, sour cream/sage. They do all the meat curing, sausage making themselves.
 
Memphis is getting there. Fuel Cafe runs one, and I think another outfit or two as well.
