Final processing of 3/4 of a deer today.

35 lbs deer plus 10lbs Boston butt.

Ground, seasoned, fine Ground, then stuffed.

15lbs sweet Italian sausage, 15lbs spicy Italian sausage, 15lbs pepper jack snack sticks (almost done in the smoker)

Oh, and I can understand why local.processpr charges $6.99 a pound for snack sticks. Dealing with those 17mm casings are a pain.

We make a pile of summer sausage every year. I also hate to give it away a whole lot of work. I do but man it's a job.
