So I needed something that tasted Autumn-ey.
Pumpkin Scones. Or biscuits if it makes you feel better.
2-� Cups All Purpose Flour
� Cup Brown Sugar
2 teaspoons baking powder
� teaspoon baking soda
1-� teaspoons pumpkin pie spice
� teaspoon salt
� Cup Chilled Butter
1 Egg, Beaten
� Cup Pureed Pumpkin
1/3 Cup Milk
It's easy. Cut the butter into the flour until crumbly. Then put all the dry in one bowl, the egg, milk and pumpkin into another. Mix the wet and then pour into the dry and mix until it all comes together. Cut into wedges or biscuit rounds and bake at 400 for between 10 and 15 minutes.
Oh and then top with this:
� Cup (1 Stick) Butter
3 Tablespoons Powdered Sugar
2 Tablespoons Dried Cranberry/Blueberry/Cherry Mix
It works with any dried berry but I like the trio mix. Soak the berries in a bowl of hot water for about 10 minutes then give them a rough chop. Soften the butter and add in the powdered sugar then fold in the berries.
Made me forget about the heat for a few.
