How early to plant trees?

I've got a bunch of pecan and plum trees in cold storage waitng on the right time to plant. What's the earliest I should plan on getting them in the ground? December? January? Any time during the dormant season or post frost?
 
I planted 25 pecan seedlings in February three years ago.

Word of caution, deer love the tender new growth leaves!
Although the pecan trees stayed alive, I had no growth! I fenced around each tree early this spring. They have grown 4 - 5 feet this summer!
 
I would wait until at least December based on my past failures with trying to plant outside the normal December-January- February times.
 
Thank you all for the responses; I'll keep them in cold storage awhile longer based on your recommendations.
