Well it is time to start another batch of Jalapeno Hot Sauce. I am doing a batch of Red Jalapenos and a Big Batch of Green Jalapenos.

Jalapeno Hot Sauce

Ingredients

2 teaspoons vegetable oil
50 fresh jalapeno peppers, sliced
6 cloves garlic, minced
1 cup minced onion
1 1/2 teaspoons salt
4 cups water
2 cups distilled white vinegar


Directions

In a medium glass or enamel lined sauce pan over high heat, combine oil, peppers, garlic, onion and salt; saute for 4 minutes. Add the water and cook for 20 minutes, stirring often. Remove from heat and allow mixture to cool to room temperature.
Transfer the mixture to a food processor and puree until smooth. With the processor running, slowly add the vinegar.
Pour into a sterilized jar with a tight lid. This sauce will keep for 6 months when stored in the refrigerator.

I tried once, and it tasted wierd. I need to get back into it. I just didn't grow any peppers this year. I'd like to make a home-grown Sriracha Sauce.
 
Thanks for the recipe! I'm going to try it one of these days.....my Sriracha bottle is getting pretty low.

Mine is about out also, I love that stuff. I guess I will have to buy me a new bottle soon to get me to next spring so I can plant the right peppers to make it.
