First, it's incredibly easy. I followed this method:

I used pink salt. I also doubled the black pepper, added some additional garlic cloves, and chopped the garlic, as well. Ultimately, I didn't wholly improve on bacon. It was delicious, but it's not enough to make you wholly swear off store-bought stuff, either. But the pride you feel in succeeding at something like this is immeasurable. And the bacon really is delicious....but then again, it is bacon.

I bought the belly at the new Whole Paycheck in Memphis. I'm not sure if they'll always have it in the case, but they make a lot of their own in-house bacon. So ask your butcher. The quality of meat at Whole Paycheck is also miles above standard grocery store stuff. Here are the pictures:

I used a mix of hardwood charcoal and "competition" mesquite briquettes. I happened to have them on hand from previous projects, so there's no real preference. I used apple and maple woods for smoking. Since I needed the grill to make dinner, I put the 225�-250� heat to it for about 2 hours, and achieved an internal temp of 140�. Suits me.....didn't see much need to get up to 165� like the recipe called for.

After a couple hours in the fridge, I started slicing. I tried to get it as thin as possible, but some came out thick-cut.

I couldn't go to all this work without tasting it, so I had to fry some up. One thing to note, even after cooking to 140�, it still felt like raw bacon. Once it hit the frying pan, there's no difference in taste or texture with fully-cooked bacon like what I have and the uncooked stuff in the grocery store.

I make my own as well, but I smoke it at a lower temperature. When I put it in the smoker, fat side up, I put brown sugar on top and get the temperature just high enough to melt the sugar. After it has finished smoking, I let it cool then remove the sugar crust. Then I slice mine thick with a electric knife and freeze it is serving size packages.

Yeah, I was thinking a smoking temp of 180-200 would produce a deeper smoke flavor.

It really didn't need it. I had the smoke rolling the entire time, and it got pulled off before it was "ready".
 
And I'm going to do another batch this weekend. Taking a bunch of money from folks at work, and will mass cure some bellies all week. Next Monday or so, we'll smoke them all in the parking lot so everyone can take home the bacon. (I swear, that pun was not intended at all)
 
I was wondering how to do this - wonder if you can do it safely with wild pig? Love bacon - but with all the chemicals in it I cringe every time I eat it. This sounds like a plan!
 
Typically... what is a 'good' price for pork belly on average? I found some but don't know if it is worth it or just buy the bacon already made.
 
Not sure what Publix has it for, but you could probably get it cheaper at an Asian market. I bought 1.5 lbs from my local butcher and I was afraid to ask.
 
Just made a little over 7 lbs last month from 4 "wild hogs" I have had in my pen for about a year. Had been pouring feed to them since they were caught. These were sows and had plenty of fat. It is tough to do with one that is "straight from the woods". My freezer is now slap full of select pork cuts, as well as sausage and bacon. ;)

This stuff is coming out to be about $7.50 per pound. I'm buying $3.99/lb pork belly from Whole Foods, so it's more expensive and higher quality than the pale pink stuff at Kroger. Even at that price point, I'm able to come in under retail price for even the bargain bacons.

I was fixing to ask where whole paycheck was but I had a blonde moment since I realize what you meant now.

I wondered the same thing, but thought, "Certainly he's not admitting to penning up wild hogs."

I would have thought you would have got more than 7lb of bacon out of 4 hogs especially if you had "been pouring feed to them" for a year.

Garlic & pepper bacon....looks great.

Don't forget to reduce the end cuts and scraps to make Chicharrones. Render the pieces down in a bit of water for a couple hrs. and fry up.

The predominate flavor your missing for store bought is liquid smoke. Unfortunately, the only way to replicate is to introduce a small amount of LS to the cure. This may sound bad, but it will add a recognizable flavor that your friends will associate with store bought.

After a couple days when liquid pools in your container, add a teaspoon of LS and massage the curing liquid into the meat. You can also inject the curing liquid back into the bacon while it continues to cure. I know a lot of guys are against injection and LS, but it is the only way to get a hint of "store bought" flavor.

If the meat is to salty, another trick is add a bit of water to the pan before frying. Cook the bacon for a min or so then pour off the water.
 
Why would I add liquid smoke to a cure if I'm smoking it fo' realz?

I consider any cooking a success if the missing predominant flavor is liquid smoke. The goal is to get away from the store bought flavor, artificial ingredients, and poor quality meat.

Sorry, but was just reading from this quote. Seems you weren't quite satisfied with how it turned out. Maybe try one w/ fewer garlic, nutmeg, juniper, etc seasonings.
 
My point was that the time & effort involved netted a very good bacon. Having never eaten anything but store-bought, I didn't know what to expect.

Poser made corned venison last St. Patty's day, and it was immeasurably better than even the best storebought corned beef. With enough squirrels, rabbits, and/or doves in the freezer, we'd never eat another bite of chicken again.

But let's face it, even the worst store-bought bacon is still bacon. It's difficult to improve on near-perfection. However, playing with the flavor profiles will let you get pretty adventurous. But it's not a life changing event.....it's really good bacon that I made myself. I don't know if there's much else to really do that'll improve it to such a degree that I'll never buy it pre-packaged again.
