This is a Belgian Abbey brewed with a yeast culture from the worlds oldest brewing monastery. It's been cold conditioning for 13 months at 33 degrees. I've been brewing for several years and it's the best thing I've made and one of the best beers I've ever tasted. This is only the 2nd pull from the keg so it's cloudy. It will be crystal clear after about a quart is drawn.

7.5 lbs Weyerman Pils
2 lbs weyerman Vienna
4oz caravienne
1.5 lbs light Belgian candy sugar
.5 lb caramunich

Pitched white labs Abbey yeast. Fermented out to 1.010 and pitched Brett B.
The Brett took it down to 1.002. Carbed to 4 volumes.
 
Looks great!! I'm not as patient as you though, lol. 13 months is a long time but I bet it was worth the wait.
That style isn't supposed to be "hoppy" but I imagine you did add some hops to balance it out. Just curious what hopps you did use, Saaz, Hallertau, Kent Goldings?????
 
My wife would kill me if I even thought about taking up brewing. Is that anything like a Belgium style triple? I had one on a brewery tour and tasting at Blackstone's in Nashville a couple of years ago. It was probably the last one we tasted, and was some heavy stuff.

Hallertau and Styrian Goldings.

Same family as the Triple but lighter bodied. Over 9% too.

Is this at the store or at home? I know where the store is, may need to stop to make sure this brew is safe for consumption lol. If I can get this $@$& shop built this spring and unclutter my garage....I'm going to get into brewing.
