Making my girlfriends some gumbo tomorrow. Ya'll tried to find okars lately? All I could find was frozen. Kinda funny, one won't eat pork and the other won't eat shrimp. Let's see how they like a lobster gumbo. I'm not telling them what's in it. Just it aint pork and it aint shrimp.

Maybe I should explain. One is my physical therapist, the other is my workout partner. Not only are they friends, they are also friends with my wife. We try to do lunch of some kind at least twice a month.

It reminds me of some oyster stew that a friend of my mother's used to make for us. We would end up pouring in the dogs dish and the dog would just look at us with disgust and walk away. We would end up spraying it out with the hose so we could feed the dog something she found my appetizing like purina dog chow. I think I would prefer the dog food myself.
 
My late, great friend, Mickey Pope, spent his entire life as a chef. He use to make an oyster chowder that would make you weep. He told me once, you don't actually cook oysters, you add them for flavor.

The key of course, is you have to like oysters to start with. I love oysters...and my mother use to do something with them that was absolutely impossible to eat. You just can't cook them too long. She cooked everything too long.

Here is the deal- oysters are delicate to handle, delicate to cook and not everybody likes them. Kinda like chicken livers. Y'all ever made chili with chicken livers? Try it.
 
BTW- The girls called. Both said the same thing-they didn't know they liked okra. One said, "A tad spicey but I thought I would stroke out before I quit eating. It should be illegal to make that."
 
I love raw oysters and I love oysters rockafeller and various other baked oyster dishes. I have never been able to stomach them in stews, jumbalayas, or gumbos. I guess its because they wer put in to soon and it brought out a nasty fishy flavor.
 
Lobster gumbo...interesting!

I made chicken/sausage gumbo yesterday during White Death 2010. My wife said it was great, and that I should make it for the Super Bowl party next week.
 
Use the lobster just as you would shrimp. Don't put it in too soon, it doesn't take long to cook and be sure to cut it into bite size pieces. And be sure to save the shells to make a base sauce. Just boil them and save the liquid. If you have whole lobsters, dress the top of your gumbo with the claws. Makes a nice presentation.
