Im sure many of you have done this, but holy cow, its phenomenal.
We processed a deer today, and I bought a whole brisket at Sams for $5/ lb. Ground 67% deer and 33% untrimmed brisket, so it isnt cheap at $1.67/ lb to make. Put up 45lbs, and made burgers for supper. Incredible flavor as a burger, much better than grinding deer with Boston butt. Not gamey (4.5yo buck, but aged 7d), and perfect amount of fat for a juicy but not greasy burger.
I have found my new fast processing recipie for bulk venison!
