The Stones River will be your closest option. Consider the Harpeth and Duck too. Parts of the Cumberland River receive less boat traffic than Percy Priest or the main part of Old Hickory.

If you can find a second person to fish with you to work out the two vehicle "shuttle" logistics, there are a bunch of streams and rivers in middle TN that are great for canoes. If you are going by yourself, some of the upper parts of Percy Priest out of Jefferson Springs, West Fork, Mona, are worth checking out. There is certainly boat traffic in those areas, but not as bad as on down the lake.
For safety, I'd recommend getting one of the Type 5 inflatable life vests and wear at all times. They are not in your way, and will not interfere with your paddling or fishing.
