What shot should you use to take geese from a 12ga? steel and lead if they are different sizes.

Lead is illegal for geese and all other waterfowl. Shoot #1, B, BB

And, it would be illegal to have any lead shot on your person while hunting geese. So, unless you are using non-toxic shot for doves, there is no legal way to kill both on the same hunt.

To add to SCN, it's legal to hunt dove on a field of manipulated crops like sunflowers but that would be illegal for geese and ducks.

I shoot 3 inch number 2's out of a modified choke and it's very effective.

If you are not familiar with a particular type of hunting, always read the regs thoroughly.
