We killed a couple Canada geese during late season duck hunts by calling them toward our spread (they didn't try to land, but gave us good passing shots). My brother just cooked one tonight, and said it tasted very much like steak.
I will say this - what they've been eating matters a lot. Last year, a friend gave me a Canada that was basically a "city bird" that took a daily trip to a slough at the outside of town where they hunted some. That bird STUNK. I honestly couldnt finish cleaning it, because it was just awful.
The one I cleaned this year, killed on the MS River, had no discernible odor at all and could have passed for a mallard as far as smell goes. The bird my brother cooked came from that same batch.
I'll be trying mine over the next few weeks!
