Geese?

We killed a couple Canada geese during late season duck hunts by calling them toward our spread (they didn't try to land, but gave us good passing shots). My brother just cooked one tonight, and said it tasted very much like steak.
I will say this - what they've been eating matters a lot. Last year, a friend gave me a Canada that was basically a "city bird" that took a daily trip to a slough at the outside of town where they hunted some. That bird STUNK. I honestly couldnt finish cleaning it, because it was just awful.
The one I cleaned this year, killed on the MS River, had no discernible odor at all and could have passed for a mallard as far as smell goes. The bird my brother cooked came from that same batch.
I'll be trying mine over the next few weeks!

Thanks for the info! I've never been close to a dead goose(that wasn't mounted)but the main reason I didnt shoot was because they look like they stink! It would be cool to get some but I have no interest in shooting what I don't plan to eat.
I cooked a couple canada geese that my son killed last year and they were like eating shoe leather.
Not a good flavor either.

I've never tried one, but didn't have my hopes up. Glad to hear there might be some hope!

I've eaten both and like both. They do have a stronger flavor than say duck IMO but taste good fried all the same.....I mean what doesn't taste good fried, right? lol
As with most wild game, prep and how it is cooked will determine whether it is edible or not....DO NOT OVER COOK!!
As far as snows, I have always been told the farther North you go the birds are not that good to eat because of what they feed on. By the time they get in our area they have fed on a lot of wheat/rice and are great table fare. Never eaten one from the North so I have no comparison.
I did see were several got thrown in our roll off dumpster at work and that quite frankly does not settle well with me.....I know they are considered a nuisance but why kill if your not gonna eat!
