After cooking 2.5 lbs of bacon this morning (home-cured, of course), I noticed a couple avocados on the counter that needed eating before they rotted out. So I sliced them up and slapped them down in the bacon grease on medium heat. They crisped up nicely, flipped easily, and didn't take any time to do. Transfer to a plate, sprinkle a little salt on them while still "wet", and try not to fall out when you eat them.

They were awesome.

Old Bay seasoning.

Slice #1 was a "proof of concept". Was excellent, so we proceeded.

Slices #2-8 experimented in various seasonings.

Old Bay sprinkled on bacon-grease fried avocados wasn't good. At all. Bleh.


The best was just the ol' reliable of salt & pepper.
