Freezing Venison for Summer Sausage

I'm cutting up my fourth and final deer for the year this evening. I'm probably going to make the whole thing into summer sausage.

Question:
Would you grind the meat before freezing or chunk it up then freeze it? (I'm thinking chunk it up and freeze it.)
 
chunk it up & freeze ,if you grind & then thaw mix x grind refreeze you will lose a lot more moisture = less quality on finished product jmo
 
Unfortunately, due to freezer space, I'll have to freeze it in chunks. The plan is to thaw the meat sometime after Christmas and make it into summer sausage. The last 15-lb batch I made was from a kit modified with some of your tips. I froze most of it and kept what was being eaten in the fridge.
 
I grind everthing first then freeze. later I get out what I need to make summer sausage. I don't freeze the summersausage so no problems.
