Smoked one last night while I was at work, and its pretty good. Gonna try to catch some more today. Might try spring hill because they were hard to come by in Franklin.

What about Marrowbone? I think I would go there before Spring Hill. I don't how many trout they put in that little creek in Spring Hill, but it gets fished hard.

spring hill is closer and marrowbone has a lot of water, hopefully there are some left in the creek.

not too far but usually the fishing is good here in the harpeth.

Today I went to spring hill and caught 3 and came back to Franklin and caught 4 more. Pics later, after I get home and take em off the BBQ.

Sweet...looks great.

We brine our trout overnight before smoking. Helps draw out a bit of moisture and firms up the meat. You'll be surprised how the texture change will hold up when mixing the dip.

:D I will always enjoy a sun drop too.
 
I thought I was gonna open the thread and you would be holding a giant striper. Thats the only use for trout I thought there was. lol. There's a reason rainbows are nicknamed "striper candy"............

I may give that a try if I ever get into some trout on the caney. I have a trout colored 7 inch Redfin
 
Looks delicious! I cook mine in olive oil, butter, capers, lemon juice. Just let them simmer in the pan, cover with lid, flip them over a couple times. The meat flakes right off the bone and then you have that sauce to dip each bite into!

I will say if you head to the Caney and get some trout that aren't recent stockers, they taste much better! They're also larger and fatter.
