Buzzard Breath

My wife has to go to Orlando for work in the near future. I've decided I'd tag along and enjoy the warmer weather for a few days. I'll have 2 days where I'll need to entertain myself until around 5. I figure I'll head to Wekiva River and rent a kayak one day and spend another fly fishing the Mosquito Lagoon with a guide. Does anyone have a guide they would recommend? I'm just at the start of my research and would also consider other options if you have any.
