Flat iron

Venison or in this case pronghorn.

My first time cutting one out, it was a lot easier than I thought. Now I need to decide how I want to prepare it.

Anyone else cut the flat iron out?

lol i only grind the trimmings. they are pretty good. i like the flanks too, makes good fajitas. my favorite cut has got to be the top sirloins.

here ya go, debone first, i leave the shanks on the bone and make osso bucco, this guy debones them:
