Just got back from the pond with a bunch of good filet size bream.Im wanting to try a new fish batter. I normally just batter with cornmeal, a little flour, garlic powder and pepper. Anybody have any good homemade batter recipes? ;)
 
Try using pancake mix instead of flour...I use 1/4 cup to 1 cup white cornmeal, garlic powder, lemon pepper seasoning...egg n buttermilk bath.
 
I like Uncle Bucks. Sometimes you can get it at kroger. To spice it up, throw in a little cayenne. I also like to add hot sauce to my egg bath.
 
2/3 cornmeal, 1/3 flour, healthy sprinking of Tony's, pinch of salt, fresh ground pepper. Shake to mox well.

Wash and drain fillets, let dry. Shake in meal, dip in egg and buttermilks wash, shake again. Drop in oil at 375 degrees. Remove when golden brown and drain on paper towels. Taste immediately to see if they need more seasoning. If so, do it right then.

It don't get any better than this. I fed 35 folks a couple weeks ago. No leftovers.
