I don't know if I like Shrimp and Grits or Fish and Grits better...Fish and Grits is cheaper but slightly more work to prepare.

Crawfish(lobster) and grits used to be a staple for me back home in Florida. sure do miss them days :grin:
 
I think fish and grits is best with an earthy fish like catfish or saltwater mullet. I surely wouldn't use anything like tuna or swordfish. However, I do like to use bream and they aren't exactly earthy IMO.

I like to use stone ground grits, not the instant or 5min stuff although they can still work in a pinch.

Fry 4-5 strips of bacon and crumble into the grits along with a good bit of butter some heavy cream and salt/pepper. That is the basics...you can add cheese, maybe some garlic and or green onions whatever you want.

As soon as I saw the title I knew the pic would rock. I sure due miss fish & grits and only make them for myself on occasion. My local wife rolls her nose up at the idea & my TN native friends due the same, but when I go down home to visit look out. I also agree sugar has no place on grits.
