So I beer battered and fried them. Good, good, GOOD stuff.

Have mercy! Used to could get some at the cheese place in Sweetwater, at least in the Spring/early Summer. But I don't get by there much anymore.

Have you tried cold smoking cheese?

I did my first experiment a couple weeks ago, 3hrs caressed with pecan smoke. Broke into it last Sunday after letting it mellow for 2 weeks.

Smoked 2 lb Sharp white cheddar
3 lb mozzarella
1 lb pepper jack

It turned out incredible! I can only imagine what it would be like beer battered and fried.
 
FB, have you tried smoking pimento cheese? Place here in town puts it on their brisket sandwich.
 
I have cold smoked cheese but it was right after I got my smoker so it has been a while. I'm glad someone warned me to mellow it. Right out of the smoker that stuff will taste like an ashtray. Two weeks later it's heavenly.

Nope. Not a big fan of mulch in my cheese. :D

One of the best things about cold smoking cheese is that you can use inexpensive cheese and make it taste high dollar.
Just make sure it is real cheese and not colored bathroom caulk they passed off as a "processed food product".

Need to keep an eye on the sale flyers to stock up the fridge for round 2 !
 
Oh geez... I didn't realize you were looking for cheese curds. I can't go anywhere without tripping over some. :D I'd send you some but they wouldn't be squeaky still.
