I like to remove all the bones, then cut the meat into "chicken strip" size pieces. Dip in milk, then roll in a 50% mix of regular flour and Aunt Jemima pancake mix. Then fry it up much like you might chicken or catfish. Salt & Pepper to taste.

Delicious!

If at all possible, the possum usually tastes better if you can feed him nothing but corn for about 3 days before "harvesting". Never really know what they've been eating, and the "corn fed" ones are usually the better eating.

So next time you set a trap for the neighborhood cat and catch a possum, ENJOY! :)
 
seen too many coming out the back end of dead cows to ever eat 1,first time I seen 1 come out of a cows butt was bad,blood & gore covered ,#6 out of a 12 sxs added to the mess lol

Possum is better than groundhog. Groundhogs have an "earthy" dirty taste to them.

And you'd be surprised what you might enjoy eating if you were hungry.
