I like to remove all the bones, then cut the meat into "chicken strip" size pieces. Dip in milk, then roll in a 50% mix of regular flour and Aunt Jemima pancake mix. Then fry it up much like you might chicken or catfish. Salt & Pepper to taste.
Delicious!
If at all possible, the possum usually tastes better if you can feed him nothing but corn for about 3 days before "harvesting". Never really know what they've been eating, and the "corn fed" ones are usually the better eating.
So next time you set a trap for the neighborhood cat and catch a possum, ENJOY! :)
