Favorite Cook Books?

Very cool. I'll have to check that one out.

Learning how to cook (versus simply following a recipe) is definitely the next step for me. I hope to take a big step this year by processing my own deer and tailoring the cuts of meat from my deer to specific dishes.
 
I only use 2 cookbooks. The Joy of Cooking and the Gumbo Shop cookbook. Eveyrthing else I google to find the recipe. I rarely if ever go out and look up a wild game recipe. Most of the time, I look up a recipe for something else and then adapt the wild game to the recipe.

1) Don't have one. I usually adapt Mediterranean style recipes to deer. If not, just word-of-mouth "down home" staple recipes.

2) Never cooked game or fish out of a cookbook

3) Julia Child's Mastering the Art of French Cooking[/u}

Otherwise, most of my recipes come from Alton Brown or the "Cooks Illustrated" line of magazines. I've developed most of my cooking skills either from watching my mom cook, or learning through many years of various Food Network programs.

Yeah, Alton's Brown's ideas and recipes are always valid in my book. I like how he often debunks "myths of cooking" and explains the science behing why you do certain things.


Exactly. If I cooked by recipe, I'd eat about 10 things total. I like the how's and why's, rather than, "Let's cook _____ for 4 people today."

I've adapted many practices to various things. Fun show to watch.

I use the Southern living and the ultament southern living cook books for everything at least once a week I will look somthing up in the southern living cook book.
 
I like cookbooks that churches put together. Those ladies have some great recipes that the average cook can use.

I don't really like the Southern Living cookbooks. I don't find them to be particularly Southern or involving food that a person can Live off of. :D
 
These are some of my favorites. They contain recipes in all classifications.
"River Roads" Baton Rouge JL, "Recipe Jubilee" Jackson,Miss JL, and "Man In The Kitchen" Everett Amis.

Italians can cook too so in addition my two etalian favorites are "Classic Italian" Marceila Hazan and "Wining And Dining" John Grisanti.

The best cookbook is the one that is the most greasy, dog eared, maybe coverless on your shelf. :)

This book is from 1987 and I guess I ain't from the same south. There is more to cooking than fryin or throwing a chunk of meat in some beans and call it seasoned. He He jk I ain't a great cook but I like this book.
 
I started with the NRA wild game cookbook (before the internet) which had recipes for all kinds of wild game. I quickly realized I needed my own cookbook of venison recipes so now when I find a recipe my family likes I put the recipe in the front of the NRA book and write it on a recipe list. I don't think I have found any two recipes from the same source other than several from the QDMA magazines. I keep my eye out for new ways to cook and every year I add a few to the list. I now have about 2 dozen family tested ways to cook it that they like. Most recipes are adapted from beef/pork/elk recipes. Keeping a 1-page list of venison recipes allows me to scan the list when I want venison but don't remember all the recipes and reminds me of some old ones I haven't had in a few years.
 
Field and Stream puts out some pretty good recipes in their magazine, as well.

They had one last fall for wild turkey pot pie. We just used chicken, but the recipe itself was unbelievably good.
 
I too loved that Field and Stream wild turkey recipe so much I had to cut it out and save it as a favorite. I was disapointed I didn't get a bird last year so I need to get some chicken and make it again.
 
No kidding, right?! How about that pepper pie crust?


Man was it good. I usually hate hard squash like that, but it was all extremely good.
