Engine over heated light comes on

Bought a boat with plans to put a new 4 stroke on it. But since I haven't sold my Tracker I may have to use this one for awhile. It's a Evinrude 115. It starts perfect and has the biggest pee stream I've ever seen on a boat. But after 5 minutes of running the over heated light comes on and after about 1 minute at slow idle speed it goes off. Someone told me to take the thermostat out and all it did was make the boat idle rough and again after 5 minutes the overheated light came on again. Then went off. Any ideas
 
I had a 75hp Mariner that the alarm would go off occasionally, the alarm was in the control box under the throttle it turned out to be a bare wire in the controls shorting out setting off the alarm.
