Boss has some duck he wants to make jerky from.
Anybody tried this? Any recipes you'd be willing to share?
TIA!

I have done it and it turned out great. I used the same recipe I use for deer, just debone and skin the breast, cut with the grain in thin slices.

Johnny Fleeman's Marinade
Worstershire
Splash of Lemon Juice
Black Pepper
Garlic Powder
Onion Powder
Crushed Red Pepper
Cayenne for added spice
Little bit of water to cover the meat

Marinate for 24-48 hours, then dehydrate. My wife said it was better than deer jerky, either way it didn't last long.

had a guy i knew gave me some duck and ive never seen duck meat but when i got to cooking it i felt like the meat handled much like venison and asked the guy if he ever heard of duck jerky being made...he said no....ive never cooked duck much less jerky so i tried it....it turned out GREAT!!!!!!!!!!!!!!! it was a mexican jerky recipe....the guy said i can have all his ducks as long as i make him some duck jerky.
