What are they and what are they for? I have seen multiple questions about them and I don't know what they are.

It is a sight mount that allows you to adjust the length of your sight bar . You can move your sight further away or closer to the riser depending on what you want .

I have a dovetail mount and after owning one I won't have it any other way. Its simply to remove the bar to place sight tapes on the sight. It's also an easy way to remove the sight for practicing blank bale.

Now you've got me interested.
Do you knock an arrow draw your bow and just let it fly? That sounds dangerous and expensive.
Or is it going through the motions without drawing and releasing.

No you shoot the arrow . Typically have a target at chest level , and shoot close . It doesn't matter how close or how far as long as you hit the target lol .
You don't just let her fly lol . Draw your bow while focusing on maintaining proper form and come to anchor . Start your release execution using back tension untill the bow fires .
It is a drill designed to let you know what a good unanticipated release feels like . It should feel like that everytime . The drill is designed to let you practice that feeling alot to where your release execution because subconscious and you don't have to think about it .
