Dove recipes?

my favorite- wrap each dove breast in black forest ham, pepper jack cheese and thick cut pepper bacon. grill till bacon is crisp. then eat the bacon, cheese and ham and feed the dove breast to the dog
 
Filet those little breasts out so so you have two nice bite-sized pieces of meat.

Marinate filets in the fridge for 24 hours in Italian dressing or Balsamic Vinaigrette.

1. Place filets on a plate or cookie sheet when ready to prep for the grill.
2. On top of each filet, place a piece of jalepeno and a dab of cream cheese. (Or, use a small piece of a hard cheese, if you prefer.)
3. Wrap the entire thing in a piece of bacon cut so it will wrap once around the filet (I usually can wrap four filets with one piece of bacon) and secure with a toothpick. Too much bacon will cover up the other flavors, in my humble opinion.
4. Throw on the grill, low and slow, until the dove is done medium rare. (Bacon will NOT be crispy by any means, but that's OK.)
5. Take off and enjoy!

NOTE: If you cook until the bacon is "done," your dove will be tough, chewy, and have the consistency of liver. (Not my favorite! =) )


Dove are just like any game-meat: Overcooked it can be awful, but if prepared right (i.e. medium rare), it's AWESOME!

My four-year old can't get enough... and neither can I! =)

1 cup eyetailion dressing,
1 tbls tenderizer,
soak overnite
wrap with a good smoky bacon & cook over charcoal with some hickory throwed on it.when the bacons done so is the dove.some folks dont know what good is :) ,mike243
 
They were truly awesome. I marinated them this morning while I went trout fishing on the Clinch! Italian dressing, white wine,and a half of a lime. Got back and wrapped them in the bacon with jalapenos and threw them on the grill. A Landshark beer to help wash them down. Wow! And to think I have been giving them away!!!!!!

Zesty Italian and I will let them go 2 to 3 day in it as well ...... also you might want to put a pineapple chunck or mandarian ordange with the pepper ....

1st tip when cooking doves is the preparation. I like to soak the breasts in salt water for at least 24 hours b4 I cook them. after that its time for the Jamaican Jerk Marinade:

6 Scallions(green onion)
2 large shallots
2 cloves of garlic
1 tablespoon minced ginger
3-4 fresh hot chiles
1 tablespoon of all spice
1 teaspoon black pepper
1/2 teaspoon cayenne pepper
1 teaspoon cinnamon
1/2 teaspoon of nutmeg
1 teaspoon dried thyme
1 teaspoon coarse salt
1 tablespoon brown sugar
1/2 cup orange juice
1/2 cup rice vinegar
1/2 cup red wine vinegar
1/4 cup soy sauce
1/4 cup olive oil

and I usually put about a 1/2 of a beer in there too, the recipe doesnt call for it, but I like it. I usually double the recipe if I am cooking 2 limits of doves (30)

let marinate for a day, wrap each breast in bacon, and grill. I promise it will make dove lovers out of dove haters.

with all those ingredients, you could make skunk meat taste good :D
 
I soak breast filets no less than 24hrs prefer 36hrs or more. Marinate in teriyaki sauce for 24hrs. Seasoning Salt,peppper, and a little bit of garlic powder on breast filet(rub in). Saute mushrooms in skillet with olive oil and small amount of teriyaki and minced garlic for 5-10 mins. Place jalapeno slice and mushroom on breast, wrap with bacon, tootpick it and grill. Awesome!!
 
I don't breast them out anymore. Now I pluck and stuff. Pluck them clean, leave the skin on and stuff with whatever. Grapes, sage, apples...whatever. Sprinkle with Cajun seasoning and grill over some glowing hardwood coals. Maybe baste with a little bacon grease. Commence to gnawin'.
