When the craving for sweet strikes, things are going to happen.
3 Cups Half & Half (I mixed 1.5 Cups or milk with 1.5 Cups of cream�because I never buy Half and Half).
6 Eggs
1/2 Cup of Sugar
2/3 Cup of Honey. Clover if you�ve got it. Pine is good, too.
1/2 teaspoon Vanilla Extract
Sprinkle of Salt
Sprinkle of Cinnamon and Nutmeg (Somewhat optional)
Set your oven to 300 degrees. Take the cream and milk or Half and Half and whisk the eggs into it. Then whisk in the sugar and honey and vanilla. Then the salt, cinnamon and nutmeg if you want it. Take that mix and divide it amongst oven-safe custard cups or ramekins.
Set the ramekins into a larger baking pan and fill the larger pan with water up to the halfway point on the ramekins. Set this into the oven and cook for about an hour. Check by stabbing one with a knife. If the knife comes out clean, you�re done. They'll still be a little wobbly but will tighten up later.
They're good warm, better when chilled overnight.
Adding a tablespoon or two of Tennessee Whiskey or Kentucky Bourbon before baking is a neat trick.
