Jerky time again! This year I got a dehydrator to try instead of smoking. It finally came in today, I got the first batch marinating but have a couple questions... #1: what temperature do you guys like? My range is 128-158f. Do you guys start high then lower towards the end? Do you do cool down in fridge or room temp?
#2: does the venison drip much? Seems like an odd design havin holes for the heater and fan electronics directly below the trays. Is there anything i should put on the bottom tray that will still allow circulation but prevent possible dripping?
Thank you in advance

I'd go as low as possible...128 in your case. I've never adjusted temperature during drying.

I've never had a problem with excessive dripping. Putting something on it might disrupt airflow.

My dehydrator isn't temp controlled. Your jerky is t cooking, and therefore I can't see the temp being a vital aspect of the process, unless the directions say otherwise. If the meat is dripping wet, lay it on paper towels before putting it on racks.
