All of the safe dehumidifiers I've seen look pretty much like a long rod with a cord. My question is, what do they do with the water?

The rod just gets warm and that creates airflow and keeps moisture from forming on things in the safe. You can't have an airtight safe or they won't work. Mine has enough gap around the door plus a 1/2" hole in the middle of the top for it to work. Been using a Goldenrod for about 20 years with no rust problems.

They heat up and keep the temperature inside the safe a few degree's warmer than the outside temp. This will cause the humidity to be less inside the safe. I have 2 in mine and it stays between 35% to 45% humidity.
