To all my fellow Tn Deer Members, the wife and I had been making quite a few batches of deer jerky, as I am a jerky nut myself along with most of my friends and family. Right before this ice storm hit us, she had put on a batch of jerky to cook. I had a stick of deer summer sausage that I had been eating on aswell as my wife caring to work to share with some of her fellow workers that always know that I will share with them when I get it from the processor. Anyway as she was putting this batch of jerky on, I came up with the bright ideal of slicing some of the summer sausage and throwing it on the dehydrater also to see how it would turn out. After being on for about 8 hours, she decided that my summer sausage was ready and pulled it off. People if you every ate a Slim Jim, all I can say is that it turned out fantastic. As I said I just threw it on as I sliced it right off the stick ( a couple pieces). So I came up with the bright ideal of soaking some as I do for my batches of jerky. I mixed up a batch of soy sauce, worcestershire sauce, liquid smoke, Wrights Hickory seasoning, along with my brown sugar ( your can season to your own taste). I had thawed out a 3 lb stick of deer summer sausage for this experiment monday night. When I came in from work Tuesday morning, I got it out and sliced the entire stick into slices about a 1/4 inch thick. I then put all of the slices in the bowl with my mix in it and put in the fridge to soak overnight. As you all know we got hit by the ice storm Tuesday afternoon and night and lost our power. So I took my bowl with my mix and summer sausage in it and put it in the freezer so it wouldn't spoil. So it soaked until the got my electric back on late Friday evening. I got up early Saturday morning and put the sausage on. The 3 lb stick yielded 5 trays of meat in my dehydrater. Talk about smelling fantastic as it cooked, boy oh boy. I let it stay on the dehydrater until about 6 pm. Folks, you talk about good, it is to die for. Its so good that it will wanna make you reach over and slap your buddy and tell him, he can't have any, lol. Any rate folks, just wanted to let everyone know if you ever thought about it and just never tried it, it is great. This way you have a simple recipe that you can do, where your deer is already ground and everything. You can season to your own taste as you mix your batch of marinading sauce.
