I did a 2 inch thick roast a while back. I marinated overnight in red wine, brown sugar, crushed garlic, t and fresh sprigs of rosemary. Next day I seared all sides in a skillet then cooked it on the grill low and slow. Very tender with a sweet savory crust. The wine really brought out a "meaty" flavor in the roast, almost steak like.
