While out scouting in the past I have found both white and red oak trees where something had been eating the nuts. There will be lots of broken shells all over the ground however, I will not always find deer droppings. I'm sure the way the nut is broken may tell you something but without the deer droppings it's hard for me to determine whether it's a hot deer stand sight or just a bunch squirrels chasing each other sight. This can make a big difference for me during a bumper acorn crop with limited days to hunt.
 
Squirrels will "peel" the acorn and deer crush "pop" them open. Normally when a deer is feeding some of the cracked open ones will be left on the ground, while the squirrels may take a peeling off and reject it if it is not a good acorn.
 
squirrels are unreal sloppy when they have a lot of mast. We used to keep a bait bucket full of acorns on our back porch but the mess was unreal. My Wife thought they would behave like Chip and Dale not Abbot and Costello.
 
One simple and foolproof method.

Look for the caps on the ground. Just the caps. If it is deer, you will find caps with a small, often circular notch cut out of the cap. Only deer do this.

Squirrels "cut" acorns, they cut around them and leave pieces on the ground. Deer swallow the entire acorn except the cap.

Not true most of the time!!!!!! While I have saw some deer swallow small white oak acorns whole, and have found a few whole acorns in their stomachs (normally bucks during the rut simply gorging as fast as they can) deer almost always pop and bust the hull off the acorn, only swallowing the 'meat' inside the hull or shell of the acorn.
Ive watched them eat acorns for hours on end through the years and its amazing how fast and how cleanly they can shell an acorn and never drop a piece of the meat inside, only the hull hits the ground! The sound it makes when a deer busts the hull of an acorn is also an unmistakable sound once youve heard it enough. I have known a deer was close by several times from listening to them busting the hull while eating acorns!

I actually found the safety mechanism from a rifle in a deers stomach once. Kid you not, red ring on one side and everything! Bizzare!
