Okay,
I just made my first batch of the year. Jerky has been something I hit a homerun with or completely strike out with. I cut up some ham steak last night into thin pieces. I didnt have any dales so I winged it on my own. I put:
Onion Powder
Ground White Pepper,
Red Pepper (little spice),
Sweet Baby Rays BBQ,
Teryaki Marniade,
and some 7up (only soda we had in the fridge..LOL)
Oh and some Light Corn Syrup (dont ask, just figured it would give it a sweetness)

I marinated the meat for 5 hours in the fridge and put it on the dehydrated last night at 9:30. I have checked it this morning and it seems dry and ready to go.
My question being: How long is long enough on the dehydrator? I dont like it crunchy dry, but I dont want nasty meat either.
 
I usually keep mine on 155 for about 6 hours, but i dont really like to do mine overnight because i dont get up and check it and i tend to keep it on to long. Also i dont know how thin you cut yours, but i usually make mine out of ground venison and squirt it out of the gun which makes it pretty thin.
 
I usually cook mine 6 hours also. I use a cheap lamp timer to
turn off dehydrator so i can sleep instead of getting up
during the night too turn it off
 
just remember that making your own mix & not having the cure/nitrates in it that it may go bad very quickly.take care in storing it hit some web sites for some ideas & saftey tips,its only a few buttons away :)
