Deer Fat for Cooking?

I never saw how deer fat would taste bad as it is know for. Have you made venison sausage using the deer fat?

I have not done that yet, but I am going to experiment soon. Problem is getting enough venison fat for sausage making. A typical deer may only have enough fat to make 2 pounds of sausage. I could do something like a salami or pepperoni stick, I suppose.

I have killed a few the last couple years that were fat, fat, fat pigs. I am sad I trashed all that fat now. its odd how much deer are like people, some are as lean as can be, others loaded with fat. :)

I've thought about that before. Technically, yes, though those are some pretty skinny casings compared to hog and beef casings.
if you ever try it then post it up. Maybe deer mini-sausages lol
 
I have never used deer fat for cooking because it taste funny to me. I have made candles out of it and it is great for that.

Big doe i killed last Saturday was literally covered in fat. All over. I was cutting dinner plate size fat that was in some places 1/2 inch thick. Next one I kill that is covered up like that one I'll trim the fat and keep it for whomever wants it.
 
I have butchered some that had fat at least a inch to inch and a half thick if not more on the hind quarters..
 
Had a lady ask me to save all I could.....wanted it for soap making !

Yeah, you can render it in large quantities in a Crock Pot. You could also make candle wax or old school grease for you Mzl.

I was going to ask about using it for ML grease..... :grin: The deer around my farm have a lot of fat and I'd never thought about using it as bullet grease before.

I think it's just personal tastes. Some people like the "wild" taste fat from wild animals produces when cooked. Some don't like it, and want their wild meat to taste a bit more domestic.

Personally, I like my wild meats to taste different than domestic meat, but I don't like the flavor associated with fat from wild animals.

We go to great lengths to remove all fats from most wild animals we kill/process/cook. Again, just a flavor-driven personal preference.
 
Same here, fat is trimmed as much as POSSIBLE on our deer, just don't care for the taste at all.
 
I just don't like the taste of it, and been years since I gave deer fat a chance to redeem its self if it does taste good. I just remember trying it once on part of one of my deer steaks, it it just left an awlful taste in my mouth. Not identical, but kind of comparable to eating a hard, green/orange, persimmon. And I am not talking about the silver skin membranes, i am talking about the actual fat the rump gets so much of.
Most of the deer I kill have a good bit around the top part of the hind quarters, tail, and all the way to the back of the backstrap. (the part of the back strap that goes up under part of the ham meat, do not know the correct anatomical term for it.)

Been years ago and haven't tried deer fat since. Maybe I will try it once again.
