For several years I used a large model folding cart that took up most of the back of my truck, but I think it was made to haul out an elephant.
But 3 years ago I bought one of those AmeriStep backpack rolling carts from Cabelas. It's a very lightweight aluminum cart that folds up into a backpack for easy carry into the woods after your deer. Once you get there, it takes about a minute to set it up, and you roll the deer right out. Pretty slick setup. And when it's folded in backpack form, it fits behind the seat of my pickup truck.
I also got a thing that allows you to hook the cart to the ball hitch on the back of my ATV. No more struggling to get the deer up onto the ATV rack. Just put the deer on the cart and pull it to wherever the closest ATV access point is, and hook the cart to the back of the ATV and drive back to my truck.
