When I filleted my wild turkey breast I found the tough white veins running through the main breast meat and the tenders and ended up splitting the fillets down the middle to remove all the veins. Also pulled as much fat off as possible to get the cleanest meat I could, and it turned out great.
Does everyone take the veins out of their meat? I can't imagine not doing so because they were so tough it would probably be like getting a rubber shoe lace in your meat if you ate it.
I also found one pellet hole in one of the fillets, for some reason there was a stray pellet or something and the blood had clotted which is a pain in the rear and I had to clean that out real good. The shot was at 5 yards and mostly hit the back of the head (took some of the skin off) so how exactly did a pellet end up in the breast meat? Maybe another hunter had shot at it or something...
