Wife and I drove to Madisonville yesterday for lunch and to pick up some Bentons bacon and country ham. After we finished our meal at Donnas the owner presented us with 2 slices of cushaw squash pie. It was a first for us. Delicious taste, like a mixture of sweet potato and pumpkin. We plan to grow some next year. Please share any recipes you have for this delicious squash.
 
Lived in KY for several years. Cushaw came be made into pies like pumpkin. Locals would slice off a piece to cook. They kept it covered with a towel or cloth and in a cool place in the basement. Never heard of it until 1977.
