Southwest Chicken
1-2 whole breasts (per person)
1 can of whole kernel corn (drained)
1 can of black beans (drained and rinsed)
1/2 jar of your favorite salsa
1 cup of rice
1 packet of fajita mix
1/4 diced small onion, or onion flakes.
Brown chicken in skillet with salt, pepper and garlic (if you like) with olive oil (or what ever you use).
Add the corn, beans and salsa to crock pot.
Put browned chicken on top of above items.
Sprinkle fajita mix over pot contents.
Cook on high for 4 hours or low for 7-8. Chicken should easily shred apart.
20 minutes before serving add the rice (I use instant) and water, if necessary.
Serve on a bed of tortilla chips, add cheese of choice and sour cream if you like.
Browning the chicken isn't necessary- just the way I like it.
