Crawfish Pie

This came out exceptionally good. I put some olive oil and butter into a skillet and heated that up, then tossed in some chopped green bell pepper and onion. After that softened up, I put in some chopped garlic. Another minute or three on the heat and I added some AP flour and stirred to make a paste. Then came the crawfish stock (I cleaned about three pounds a few weeks ago and kept the shells just for this) and some heavy cream after it thickened up. Salt, pepper, and a little Cajun seasoning came next before finally adding the tail meat. It looked like this:




All that cooked for another five or so minutes before being put into a homemade pie crust. Then it went into a 350 oven for probably 40ish minutes. In the end, it looked like this.



One of the best things I've eaten in a while. I'm highly happy.
