Since coyotes are not game animals but dangerous pests, would you need a hunting license to shoot coyotes if that was all you were doing ?

Yes.
They actually are a game animal, thus the season that is set on them.
Furthermore, if you are hunting coyotes during deer season you will have to hunt them with whatever weapon is in season for deer ie: bow, muzzleloader or gun.
Not sure of what license you will need to have on your person or if you have to abide by any blaze orange requirements.

If you want to use a center fire rifle during the deer g/m/a season, you will have to be a legal big game hunter with the proper licenses for deer and the blaze orange.
