Is it legal to gut a deer in the morning and return later that day to hunt over the gut pile for coyote or is this considered baiting? Attempted looking in the guide, but couldn't find anything really. Thanks
 
The scenario you presented would be legal.

IMO, relocating the gut pile and then hunting would be baiting.

And, as a reminder, during the archery and muzzleloader seasons, only archery, rimfire, and shotguns with size T or smaller are legal for coyote hunting.

When the G/M/A deer or bear seasons open,only legal big game hunters (blaze orange and big game gun license, unless under landowner exemption) may use centerfire weapons to coyote hunt.
